Abstract

Hybrid Flavours in Mexico: Gastronomic Features in the Venetian Community of Chipilo

The gastronomy in Chipilo is a clear example of an ancient culture that has been handed down from generation to generation and is kept alive thanks to mergers with the ‘other’ culture.
After years of hard work an emigration group from Veneto consolidated in a community with  proper language and culture inside the mexican territory. We offer a testimony of gastronomy hibridation between conservation and innovation.
