Abstract

Creole Cooking Traditions as a Heritage of Emigration

An analysis of the culinary tradition of North-Western Argentina – and, as a consequence, including also literature in a wider perspective – of the urban Andean area and of the rural area in the province of Salta, because all of these places preserve still nowadays some traditions passed on from generation to generation.
