«Nespresso! What else?». Notes on the Migratory History of Italian Cooking in the USA

The essay focuses on the relevance cuisine has had in Italian-American culture and its reception within the North-American social system. Following the development of the art of cooking from a mere mark of marginalized national specificity, to its insertion into a new social representation, the essay analyses the evolution  of the migrants’ condition towards self-definition in the new context.
